For now, get your hands some brightly coloured wild caught Salmon or Ocean Trout and you can't go wrong... NZ sourced or framed is also a winner due to the pristine waters and biodynamic farming practices.
Here's all you need
Step one
Heat oven on 180 degrees. Line a baking tray with baking paper and place salmon skin side down.
Step two
Whisk maple syrup, miso, tamari, vinegar, and chili flakes in a small bowl to combine and pour over salmon
Step 3
Place in preheated oven and bake for 18-20 minutes. The salmon should be sticky and browned on top and flake easily in the middle.
Step 4
Serve salmon on rice or a bed of greens, drizzle with any leftover glaze. Top with shallots, sesame seeds, and chili flakes. Serve with lime wedges alongside for squeezing over.
